OUR STORY
Eric’s journey began in childhood, learning the traditions of the island with his father. From tapping maple trees to gathering seaweed, these early experiences instilled a love for Grand Manan’s natural gifts.
When Eric established Arbor & Shore, he brought these traditions to life, merging family heritage with a vision of creating sustainable, natural products that reflect the island’s spirit.
THE ART OF MAPLE SYRUP
On Grand Manan Island, maple syrup production is more than a craft; it’s a time-honoured tradition that celebrates the island’s natural rhythms and heritage. Each year, as the seasons change, the maple trees are tapped, producing sap with subtle variations in colour and flavour. These changes, influenced by the timing of the harvest, create distinct grades of syrup, each with its own unique profile.
Tapping the Trees Across Seasons
The process begins with selecting mature maple trees, which are tapped at different times of year to capture the natural variations in sap. Early season sap is lighter and yields a delicate, golden syrup, while late-season sap, darker and richer, produces a syrup with a bold, robust flavour. Each tap allows the tree’s sap to flow naturally, providing fresh, seasonally unique syrup.
Collecting the Sap
As the sap flows, it’s collected with care using sustainable methods that respect both the trees and the land. Eric makes regular rounds to gather fresh sap, capturing the subtle changes in flavour from early-season lightness to late-season richness. This hands-on approach reflects the tradition of island harvesters who have long worked in harmony with Grand Manan’s natural cycles.
Boiling and Evaporating
Once collected, the sap is transferred to an evaporator where the transformation into syrup begins. Through a slow and controlled boiling process, water evaporates from the sap, thickening it into syrup. This stage requires both skill and attentiveness to capture the unique flavour notes of each grade, from the lightest golden to the darkest amber.
Filtering and Bottling
When the syrup reaches its ideal texture and flavour, it’s filtered to ensure clarity and purity. Finally, it’s bottled in small batches, preserving the distinct seasonal character that only Grand Manan’s maples can offer. Each bottle of Arbor & Shore maple syrup represents hours of careful work and a deep respect for the island’s natural gifts.
